Instant Pot Broccoli Cheese Soup

Here on our little country estate, it’s been pretty cold. Well, off and on. We can experience all four seasons in a day.

It’s soup and stew weather. We are, like everyone else, trying to eat healthier. This lower carb soup fits the bill. If you want it to be even lower in carbs, reduce the carrots and onions.

First, here’s the ingredient list:

  • 1 12 oz bag of broccoli florets
  • 3 cups of shredded cheddar cheese
  • 2 cups of heavy whipping cream
  • 1 cup diced carrots
  • 1 cup celery
  • 1/2 to 1 tsp minced garlic
  • 2 tbs butter
  • 2 cups chicken broth
  • shredded cooked chicken (optional)
  • salt and pepper to taste

Let’s Get Cooking!

This recipe is for a 6 qt (or bigger) electric pressure cooker. Don’t have one, don’t worry, you can still make this in your crock pot. I’ll tell you how at the end.

First, turn the instant pot to medium saute (leave the lid off while sauting). Add your butter. Once the butter is melted add the carrots, onions, celery, and I add 3 raw chicken tenderlions. After those have cooked for a couple of minutes, I add the garlic.

Once the onions are tender (about 5 minutes), turn off the saute mode. Add the broccoli, frozen is fine. Aaahhh no waiting for defrosting. Add the chicken broth. Salt and pepper to taste.

Give all that deliousness a stir.

Secure the lid. Seal the vent. Cook on manual mode, high pressure for 5 minutes. YESSS, 5 minutes, people!!! When finished cooking manually release the pressure.

Once pressure is released, open the pot, shred the chicken (I just use two forks to shred it right in the pot) and add your cheese and whipping cream.

Dish up that comfort food. You can garnish with more shredded cheese. The hubby and I like to sprinkle a little cayenne pepper on top.

Crock Pot version

Saute your veggies in the butter in skillet on the stove. Once onions are tender, put veggies and everything except the cream and cheese in crock pot. Cook on low for 8 hours or high for 4. Five minutes (or so) before serving slowly stir in cream and add cheese. Stir and serve.
